Peanut Butter and Fruit Quinoa
Ingredients

2 cup water

1 cup quinoa

¼ cup apple juice or cider

3 tablespoon reduced-fat creamy peanut butter

1 small banana, chopped

2 tablespoon raspberry or strawberry spreadable fruit

4 teaspoon unsalted, blanched peanuts
Directions

In a medium saucepan combine the water and quinoa. Bring to boiling; reduce heat to medium-low. Cook, covered, for 10 to 15 minutes or until water is absorbed. Remove from heat. Add apple juice and peanut butter, stirring until combined. Stir in banana.

Divide mixture among four bowls. Add a spoonful of spreadable fruit to each serving; top with peanuts.
