Creamy Cucumber Salad
This salad combines everything you love about pickles with a delicious dressing made with sour cream (or yogurt). These creamy cucumbers are incredibly easy to make, requiring only 15 minutes of prep time. Once everything is finished chilling, you’ll have a sweet, tangy cucumber recipe that is healthy and refreshing.
Tips for Making Creamy Cucumber Salad
Here are tips for prepping cucumbers to use them in any recipe.
- Avoid peeling your cucumbers. If you peel the skin, the cucumber will lose a lot of its nutrients. If you want your meal to stay nutritious, then eat your cucumbers while they’re unpeeled. Simply wash them thoroughly before using.
- Salt your cucumbers before cutting. This will help cucumbers release their moisture. It can also add more flavor to the meal and prevent the cucumbers from making your salads too watery.
- Consider removing cucumber seeds. If the seeds are small, you can leave them in. But if they are too large or you simply don’t want them in your salad, then quarter the cucumbers first, then cut (or scoop) out the seeds at an angle.

1 large cucumber, peeled (if desired), halved lengthwise and thinly sliced (3 cups)

Prepare the Salad
In a medium bowl combine sour cream, vinegar, salt, dill, and pepper. Add cucumber and onion; toss to coat. Cover and chill for 4 hours or up to 3 days, stirring occasionally. Stir before serving.
